Made in the traditional methode, Palliser Estate Methode Traditionnelle is matured for two years on yeast lees before bottling. This time allows autolysis of the yeast, giving nutty, toasty aromas and characters. Citrus fruits characters and hints of peaches can be seen from the Chardonnay portion of the blend, while the Pinot Noir gives richness and depth. A wine for celebrations and any time.
